White Bean Hummus

This week her batch cooking plan called for Marcela white beans and she turned the extra into a simple easy hummus using one of her favorite recipes!

Traditionally hummus is prepared with chickpeas, but winemaker Thérèse prefers using beans because they provide more nutrients, protein and fiber per serving, both of which are so important to our health.

No matter how you use hummus, you'll enjoy this one!

INGREDIENTS:

  • 2 c white beans (Thérèse uses Marcela from Rancho Gordo, for sale at the winery)

  • 1/2 c tahini

  • 1 clove garlic

  • 1tbsp white miso

  • Juice of whole lemon

  • Fresh chopped parsley to taste( adds a wonderful freshness)

  • Salt and pepper

DIRECTIONS:

  • Put all the ingredients in a food processor.

  • (A high speed blender will work but a food processor is preferable)

  • Blend until smooth.
