Apple Raisin Walnut Muffins

INGREDIENTS:

  • 1 ½ cups of oats ground

  • ¾ cup almond meal

  • 2 tbsp baking powder

  • Cinnamon cloves ginger add what you want I do a ½ tsp of each

  • 1 cup plant based milk

  • 1 cup dates

  • 2 apples shredded

  • 1cup nuts

  • 1 cup raisins or cranberries

DIRECTIONS:

Mix all dry ingredients in a bowl set aside. Take plant based milk and dates and soak for an hour or so. Put in vita-mix and blend until smooth. Shred apple and add to date mix. Combine dry and wet and fold in the nuts and dried fruit. I spray a coconut spray or olive oil in muffin tins and use an ice cream scoop for filling the muffin tins with batter. Bake at 350 for about 12-16 minutes. Test with a toothpick for doneness.
